"NCAT worked with Health Care Without Harm and numerous other partners across New England to develop a plant-based food product made from locally grown yellow peas. The resulting yellow-pea falafel is now on the menu for several regional hospitals, where it helps them lower their environmental footprint, provide healthy food, and support their communities. In addition, the project helped create a stronger market for farmers' yellow-pea cover crops, promoting farm viability and soil health."
